Dinner update

We just finished eating the Mexican Polenta Casserole. The kid gave it a thumbs up, though she didn't like how gooey the polenta was. Next time I'm going to spoon out the polenta, bake it slightly to get it good and crusty, and then top with the rest. I'm also going to double the seasonings in the meat mixture as well as add some garlic and bell pepper. As I was making it I was thinking that it would have been a good way to sneak in some other veggies like zucchini. We'll try that next time. :)

All in all, we'll repeat it again just with tweaks.
